Goat scrotum sounds totally gross, doesn’t it? The truth is, it’s a beer that everyone enjoys. One of the reasons why it is so popular is that it can be made in many different ways and in many customized flavors. If you like chocolate, you can make it taste like bittersweet chocolate. You may prefer a fruity ginger beer, a spicy flavored concoction, or a smooth and aromatic beer. There are hundreds of possible combinations and creating your own personal varieties is a fascinating hobby.

Goat Scrotum Ale became extremely popular in the early 1800s when it was known as “Tumultuous Porter”. The deeply satisfying ale continued to be a big favorite of beer drinkers until prohibition came and the beer and its recipe disappeared. Lucky for us, the recipe was brought back to an appreciative world of home brewers by a researcher named Charles Papazian.

Making Goat Scrotum Ale the Papazian way was very exciting, to say the least! Here are the Papzian ingredients:

5 lbs dark malt extract

1 pound of crystal malt

1/4 lb each black malt and crushed roasted barley

3 1/2 oz Hallertauer leaf hops

1 cup each brown sugar and blackstrap molasses

1 lb. corn syrup

2 spoons of gypsum

1 tablespoon Irish moss

1 kg of ale yeast

3/4 cup corn sugar to fill the bottle with

To customize your drink and create your own special drink, you can use these optional ingredients in any combination you like:

2 to 4 oz freshly grated ginger root

Up to 2 inches drinking licorice

2 tablespoons of fir tree essence

1 to 10 dry chilies

1/4 cup finely crushed juniper berries

6 oz unsweetened Bakers chocolate or cocoa powder

Below are the instructions of Mr. Papzian:

Place the crystal malt in the boiling water for one hour at 150F. Remove the remains of the crystal malt and mix with the dark malt extract, brown sugar, blackstrap molasses and a pound of corn sugar.

Let it simmer gently until all the ingredients are completely dissolved. Add a quarter ounce of hops and the optional ingredients you choose to use. Boil for fifteen minutes. Then add half an ounce of hops and boil another fifteen minutes.

Pour in the black malt and crushed roasted barley. Boil for another

fifteen minutes. Add another quarter ounce of hops and gypsum and Irish moss. Boil for thirteen minutes. Now stir in the remaining half of the hops, boiling for another two minutes.

Allow the wort to cool to room temperature. Strain carefully while transferring the liquid to the fermenter. When the temperature of the cider drops below 80F, stir in the yeast.

And finally, when the St. John’s wort has completely finished fermenting, add three-quarters of a cup of corn sugar.

Now you’re ready to bottle your delicious creation and look forward to that tantalizing first sip.
